The Chinese Pomfret (斗昌) is highly priced for its sweet flesh and succelent texture. This is one of a handful of fishes that can break the $100 barrier during the Chinese New Year period. A good quality Chinese Pomfret is also the showstopper at high end Teochew restaurants.

How to cook: Steamed Cantonese Style.

How to cut: Scale, remove gills and innards. 

- Black Pomfret is sold as a whole fish at approximately 500g each.

-Weight indicated includes guts and scales if applicable.
