Taiwan Spring Onion Pancake

Frozen Cong You Bing
1 Taiwan Sausage
1 Egg
1 Clove Garlic, Minced
2-3 Tbsp White & Red Cheddar Cheese, Grated
1. Heat 1 tsp oil and pan fry Taiwan sausage. Add in minced garlic cook garlic to about  70-80% cooked. Remove from pan and set aside
2. Pan fry frozen cong you bing on both sides until golden brown before removing from pan. Note that the cong you bing must be frozen when frying for easy handling. 
3. Break egg and pan fry egg omelette style on one side. Add in cheddar cheese when egg is 70% cooked by sprinkling it all over the omelette. When cheese starts to melt, return the cooked cong you bing by placing it on top of the cheese.
4. Flip the pancake over a plate and start cooking the other side and cook for another min or so. Flip the pancake into half like a tortilla wrap. Serve hot
