180g Pasta (Angel Hair / Penne / Fettucine)
1.5 Tbsp Olive Oil
150g Small / Medium Prawns
2 Whole Anchovies Fillet
2 Cloves Minced Garlic
2 Cloves Sliced Garlic
¼ Cup White Wine (Sauvignon Blanc)
1 Tsp Chilli Flakes
2 Tsp Grated Parmesan (Powder Type)
1 Tbsp Hunt Tomato Paste
¼ Canned Diced Tomato (Try to get Hunt Brand as it taste closest to real tomato)
2 Lemon Wedges
Chopped Parsley / Cilantro
Salt to Taste
- Boil pasta until al dente and set aside, keep about 1 cup of pasta water.
- Heat pan with olive oil and pan fried anchovies, add in garlic and fry till fragrant.
- Add in prawn, stir fry till 80% cooked, add in tomato paste, diced tomatoes, chilli flakes, grated parmesan pasta water cook for about 1min.
- Stir in pasta and mix well with the sauce. Add in the white wine and let it cook for about 1min. Drizzle with some lemon juice and garnish with chopped parsley. Taste and season with salt according to taste.
